Lentil Salad

Ingredients for 4 people

  • 150g. brown lentils
  • 3 peppers (red, green and yellow)
  • 3 gherkins
  • 250g. firm tomatoes
  • 50g stoneless black olives
  • 1 bunch of radishes
  • 1 large onion
  • 1 tin of corm
  • 1 teaspoon vegetable stoc
  • 2 teaspoons olive oil
  • 1 tablespoon vinegar
  • ½ teaspoon cumin
  • Salt, freshly ground pepper

     Method:

    1. Soak the lentils in warm water for an hour.
    2. Bring to the boil and allow to simmer for 15 Minutes, so that they are still al´dente.
    3. Strain and cool.
    4. Cut peppers and tomatoes onto cubes.
    5. Cut the radishes, gherkins and olives into small pieces.
    6. Cut onion up small.
    7. Strain corn.
    8. Mix all the ingredients with the lentils, season with vinegar and pepper to taste . Allow to stand for ½ an hour before eating..
