Ingredients for 4 people
150g. brown lentils
3 peppers (red, green and yellow)
3 gherkins
250g. firm tomatoes
50g stoneless black olives
1 bunch of radishes
1 large onion
1 tin of corm
1 teaspoon vegetable stoc
2 teaspoons olive oil
1 tablespoon vinegar
½ teaspoon cumin
Salt, freshly ground pepper

Method:
- Soak the lentils in warm water for an hour.
- Bring to the boil and allow to simmer for 15 Minutes, so that they are still al´dente.
- Strain and cool.
- Cut peppers and tomatoes onto cubes.
- Cut the radishes, gherkins and olives into small pieces.
- Cut onion up small.
- Strain corn.
- Mix all the ingredients with the lentils, season with vinegar and pepper to taste . Allow to stand for ½ an hour before eating..
