Ingredients for 4 people
1 Kgg spinach or mangold
3 cloves of garlic
2 tablespoons lemon juice
3 tablespoons olive oil
2 tablespoons roasted almonds, chopped up coarsely
1 teaspoon salt
¼ teaspoon black pepper

Method:
- Wash the spinach well several times and remove the hard stalks or use pound of frozen spinach.
- Cut the spinach slightly and steam in a closed pan for ten minutes without water. Strain and allow to cool .
- Squeeze the garlic clove over the spinach.
- Place the spinach in a bowl together with oil, lemon juice, salt and pepper, mix well. Taste, and allow to stand for about an hour.
- Distribute the roasted almonds
