Ingredients for 4 people:

  • 1 cup lentils
  • 1 cup long grained rice or 1 cup of coarse Burghul*
  • 4 cups water
  • 500g onions
  • ½ teaspoon pepper
  • ½ teaspoon cumin*
  • 1 tablespoon meat stock
  • Oil for frying
  •  

    Serve with:

    3 tubs of yoghurt or

    500g Tomatoes or

    300g Tzaziki

     

    *Available in Turkish shops

    Biblical Lentil Dish

    Mjaddara

    Method:

    Wash the lentils and soak overnight in 4 cups of water, or two hours in warm water. Add salt, pepper, cumin and meat stock to the lentils and bring to the boil. After about ten minutes add the rice or the Burghul and stir well. Bring to the boil again with the lid closed, then allow to cook for twenty minutes at a low heat without stirring. Cut the onions into rings and fry them till they are crispy. Scatter them over the lentil dish and serve with yoghurt, tomato salad or tzaziki
